A Bit of Candy Cane History
Did you know that candy canes have been around for centuries? Their origins can be traced back to 17th century Europe. The story goes that a choirmaster at Cologne Cathedral in Germany wanted to keep the children quiet during long Christmas services, so he asked a candy maker to create sweet treats in the shape of a shepherd’s staff. This shape would remind the children of the shepherds who visited baby Jesus, adding a touch of religious significance.

Ingredients:
- 2 cups granulated sugar
- 1/2 cup water
- 1/2 cup light corn syrup
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon peppermint extract
- Red food coloring
- Powdered sugar for dusting
Instructions:
- Prepare Your Workspace: Line a baking sheet with parchment paper and dust it lightly with powdered sugar. Set out two heatproof bowls.
- Cook the Sugar Mixture: In a medium saucepan, combine the granulated sugar, water, corn syrup, and cream of tartar. Stir over medium heat until the sugar dissolves. Once it starts to boil, stop stirring and allow it to reach 285°F (140°C) on a candy thermometer.
- Add Flavor and Color: Remove the mixture from heat and quickly stir in the peppermint extract. Pour half of the mixture into one heatproof bowl and the other half into the second bowl. Add red food coloring to one of the bowls and stir until fully mixed.
- Shape the Candy Canes: Working quickly while the mixture is still pliable, pour the mixtures onto the prepared baking sheet. As they cool slightly, start to pull and twist sections of each color together to create the classic candy cane stripes. Form them into hook shapes.
- Cool Completely: Let the candy canes cool and harden completely before enjoying.
